Cuchillo, New Mexico is 15.1 miles north and west of Truth or Consequences, New Mexico. Travel north on Highway 181, which some folks would call the frontage road that takes you to the T or C Municipal airport or the Sierra County landfill. Turn left onto Highway 52 and continue West. On the right you will see the Trap Shoot Club and further down the road there will be a cutoff to Montecello. Don't take that road, keep on the left and head on into Cuchillo.

The Cafe is Located in Cuchillo, New Mexico on Highway 52 in the original building that Felix and Aggie first began their venture selling hamburgers for 25 cents!! They would get up at 4am to cook and grind the blue corn for enchiladas. They built their little business and became so popular that customers would request them to send their homemade tamales and tortillas by bus to out of state locations. The CUCHILLO CAFE was a well know spot and locals in the mostly farming and ranching community appreciated having a great place to eat and hangout.

The Cafe was opened in 1948 by Felix and Aggie Sanchez. They stayed in business for 20 years before he got sick and passed away in 1971. The cafe sat alone for many years after Felix died because Aggie was unable to continue without him.

Aggie's son Benjie Torres along with his wife Lydia Armijo Torres, children Tony Candelaria and Donna Samora reopened the cafe in June 2007.

The food is homemade, great tasting and served just like you were in Lydia's dining room. We are a NEW MEXICAN food cafe.

Fresh home made blue corn tortillas, white corn tortillas, salsa, flour tortillas and sopaipillas are the house specialty and the signature dish is stuffed sopaipillas. The recipes were learned from knee high in the kitchen of Lydia's parents, Alfredo and Lola Armijo, as well as passed down by Aggie Sanchez, Benjie's mother.

When you enter the cafe, you are transformed into a different time of life where friendliness, courtesy, no hurries, no worrys is unparalled.
